A squeaky, golden Finnish cheese baked until charred and caramelized, served warm with cloudberry jam.

Ingredients

  • 2L fresh whole milk (or colostrum milk traditionally)
  • 2 tbsp white vinegar or rennet
  • 1/2 tsp salt
  • Cloudberry jam for serving
  • Cream for serving (optional)

Instructions

  1. 1 Heat milk to 37°C. Add vinegar or rennet and stir gently. Let stand 30 min until curds form.
  2. 2 Pour curds into a cheesecloth-lined colander. Press gently to drain whey.
  3. 3 Press curds into a flat disc about 2cm thick in a cast iron skillet or oven-safe pan.
  4. 4 Broil or bake at 250°C for 10-15 min until the surface develops charred brown spots.
  5. 5 Cut into wedges while warm. Serve with cloudberry jam and optionally warm cream.
