Heat milk to 37°C. Add vinegar or rennet and stir gently. Let stand 30 min until curds form.

Pour curds into a cheesecloth-lined colander. Press gently to drain whey.

Press curds into a flat disc about 2cm thick in a cast iron skillet or oven-safe pan.

Broil or bake at 250°C for 10-15 min until the surface develops charred brown spots.

Cut into wedges while warm. Serve with cloudberry jam and optionally warm cream.

The Story Behind Leipäjuusto
Leipäjuusto (bread cheese) originated in the cattle country of Ostrobothnia and Kainuu, where it was traditionally made from rich colostrum milk after a cow gave birth. The cheese was dried by the fire and could be stored for years, then reheated when needed. Today it remains a cherished Finnish specialty.
