Plump, cardamom-scented Finnish cinnamon rolls with a caramelized sugar crust, the cornerstone of every Finnish coffee break.

Ingredients

  • 500g all-purpose flour
  • 50g sugar
  • 1 tsp ground cardamom
  • 7g instant yeast
  • 250ml warm milk
  • 80g butter, melted
  • 1 egg
  • 1/2 tsp salt
  • For filling: 60g soft butter, 80g sugar, 2 tsp cinnamon
  • Egg wash and pearl sugar for topping

Instructions

  1. 1 Mix flour, sugar, cardamom, yeast, and salt. Add warm milk, melted butter, and egg. Knead 10 min until elastic.
  2. 2 Cover and let rise 1 hour until doubled in a warm place.
  3. 3 Roll dough into a large rectangle. Spread with soft butter, sprinkle with cinnamon sugar.
  4. 4 Roll up tightly from the long side. Cut diagonally into 16 pieces.
  5. 5 Place on baking sheets, flatten slightly with palm. Cover and let rise 30 min.
  6. 6 Brush with egg wash, sprinkle with pearl sugar. Bake at 225°C for 10-12 min until golden.
