Ingredients
1 kg chicken, cut into pieces
250g tomato sauce
100g chicken liver paste or liver spread
2 potatoes, cubed
2 carrots, sliced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup green olives
50g cheddar cheese, grated
1 onion, diced
4 cloves garlic, minced
3 tbsp soy sauce
1 cup chicken broth
2 bay leaves
2 tbsp cooking oil
Salt and pepper
Instructions
1Heat oil in a heavy pot. Brown chicken pieces on all sides. Remove and set aside.
3Return chicken, add soy sauce, chicken broth, and bay leaves. Simmer 20 minutes.
4Add potatoes and carrots, cook 10 minutes.
5Stir in liver paste, bell peppers, and olives. Simmer 5 more minutes.
6Stir in grated cheese until melted into the sauce. Season with salt and pepper. Serve over rice.
