Ingredients

  • 1 kg chicken, cut into pieces
  • 250g tomato sauce
  • 100g chicken liver paste or liver spread
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup green olives
  • 50g cheddar cheese, grated
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 cup chicken broth
  • 2 bay leaves
  • 2 tbsp cooking oil
  • Salt and pepper

Instructions

  1. 1 Heat oil in a heavy pot. Brown chicken pieces on all sides. Remove and set aside.
  2. 2 SautƩ garlic and onion until softened. Add tomato sauce and cook 3 minutes.
  3. 3 Return chicken, add soy sauce, chicken broth, and bay leaves. Simmer 20 minutes.
  4. 4 Add potatoes and carrots, cook 10 minutes.
  5. 5 Stir in liver paste, bell peppers, and olives. Simmer 5 more minutes.
  6. 6 Stir in grated cheese until melted into the sauce. Season with salt and pepper. Serve over rice.
