Ingredients

  • 500g firm white fish, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 1 cup water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. 1 Heat oil in a pot and saute onion until golden brown.
  2. 2 Add garlic and ginger, cooking for one minute.
  3. 3 Stir in curry powder, turmeric, and cumin until fragrant.
  4. 4 Add diced tomatoes and cook until they soften into a sauce.
  5. 5 Pour in coconut milk and water, bringing to a simmer.
  6. 6 Add fish pieces gently and cook for twelve minutes until flaky.
  7. 7 Garnish with fresh cilantro and serve with steamed rice.
