Ethiopian Honey Bread

A tender, aromatic bread enriched with honey, eggs, and niter kibbeh, lightly spiced with cinnamon and baked until golden brown.

Ingredients

  • 3 cups all-purpose flour
  • 7g instant yeast
  • 3 tbsp honey
  • 2 eggs, beaten
  • 3 tbsp niter kibbeh, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1 tsp salt
  • 3/4 cup warm milk
  • 1 tbsp nigella seeds

Instructions

  1. 1 Combine flour, yeast, cinnamon, cardamom, salt, and nigella seeds in a large bowl and mix well together.
  2. 2 Add honey, beaten eggs, melted niter kibbeh, and warm milk. Mix until a soft, slightly sticky dough forms.
  3. 3 Knead for ten minutes on a lightly floured surface until the dough is smooth, elastic, and springs back.
  4. 4 Shape into a round loaf and place in a greased round baking pan. Cover and let rise for one hour until doubled.
  5. 5 Brush the top with beaten egg and score a cross pattern. Bake at 180C for thirty-five minutes until golden.
  6. 6 The bread is done when it sounds hollow when tapped on the bottom. Cool slightly before slicing into wedges.
