Ethiopian Honey Bread

Combine flour, yeast, cinnamon, cardamom, salt, and nigella seeds in a large bowl and mix well together.

Add honey, beaten eggs, melted niter kibbeh, and warm milk. Mix until a soft, slightly sticky dough forms.

Knead for ten minutes on a lightly floured surface until the dough is smooth, elastic, and springs back.

Shape into a round loaf and place in a greased round baking pan. Cover and let rise for one hour until doubled.

Brush the top with beaten egg and score a cross pattern. Bake at 180C for thirty-five minutes until golden.

The bread is done when it sounds hollow when tapped on the bottom. Cool slightly before slicing into wedges.
