A traditional drink made from the pulp of ripe marula fruit, served fresh as juice or slightly fermented as a mildly alcoholic ceremonial beverage.

Ingredients

  • 2kg ripe marula fruit
  • 1 liter water
  • Sugar to taste optional

Instructions

  1. 1 Select fully ripe marula fruit that has fallen naturally from the tree. They should be yellow and slightly soft.
  2. 2 Remove the outer skin of each fruit. Squeeze the pulp firmly to extract the juice, discarding the fibrous material and pit.
  3. 3 Strain the extracted juice through a cloth to remove any remaining pulp and seeds for a smooth drink.
  4. 4 For fresh juice, dilute with water and add sugar if desired. Serve immediately while the flavor is bright and tropical.
  5. 5 For traditional fermented buganu, leave the unstrained juice in a covered container for two to three days until mildly fizzy.
