Ingredients
500ml cranberry or lingonberry juice
80g semolina
100g sugar
Pinch of salt
Fresh berries for garnish
Cold milk for serving (optional)
Instructions
1Bring berry juice to a boil in a saucepan.
2Gradually whisk in semolina, stirring constantly to prevent lumps.
3Add sugar and salt. Cook on low heat, stirring, for 5 min until thick like porridge.
4Remove from heat and let cool to lukewarm.
5Beat with an electric mixer on high speed for 8-10 min until the mixture triples in volume and becomes a fluffy, light pink foam.
6Spoon into serving bowls and chill. Serve with cold milk poured around the foam.
