Ingredients

  • 500g fresh spinach, washed and chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 jalapeño, minced
  • Salt and pepper
  • Juice of half a lemon

Instructions

  1. 1 Heat olive oil in a large skillet over medium heat, add sliced onion and cook for five minutes until softened.
  2. 2 Add garlic, cumin, and jalapeño, sauté for one minute until fragrant.
  3. 3 Add spinach in batches, tossing with tongs as each batch wilts down to make room for more.
  4. 4 Cook for five minutes total until all greens are wilted and tender, season with salt, pepper, and lemon juice.
  5. 5 Serve as a side on the injera platter, positioned next to contrasting stews.
