4 ready-made meringue nests (or homemade)

400ml double cream

2 tbsp icing sugar

1 tsp vanilla extract

400g fresh strawberries, hulled

2 tbsp caster sugar
Instructions

Hull and quarter strawberries. Toss half with caster sugar and crush lightly to release juices. Leave the rest whole.

Whip double cream with icing sugar and vanilla to soft peaks.

Crush meringue nests into rough chunks — some large, some crumbled.

Fold meringue pieces and crushed strawberries through the cream, swirling to create streaks of pink.

Spoon into glasses or bowls. Top with remaining whole strawberries.

Serve immediately before the meringue softens.
