A tumble of crushed meringue, whipped cream, and fresh strawberries — deliberately messy, effortlessly elegant, perfectly English.

Ingredients

  • 4 ready-made meringue nests (or homemade)
  • 400ml double cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • 400g fresh strawberries, hulled
  • 2 tbsp caster sugar

Instructions

  1. 1 Hull and quarter strawberries. Toss half with caster sugar and crush lightly to release juices. Leave the rest whole.
  2. 2 Whip double cream with icing sugar and vanilla to soft peaks.
  3. 3 Crush meringue nests into rough chunks — some large, some crumbled.
  4. 4 Fold meringue pieces and crushed strawberries through the cream, swirling to create streaks of pink.
  5. 5 Spoon into glasses or bowls. Top with remaining whole strawberries.
  6. 6 Serve immediately before the meringue softens.
