Ingredients

  • 3 green plantains
  • 3 eggs
  • 150g queso fresco, crumbled
  • 2 tbsp butter

  • Salt and pepper

  2. 2 Melt butter in a skillet. Sauté onion until translucent.
  3. 3 Add mashed plantain to the skillet, stir to combine with onion.
  4. 4 Push plantain to the sides, scramble eggs in the center, then fold everything together.
  5. 5 Add crumbled cheese, stir until it melts into the mixture.
  6. 6 Serve hot with strong Ecuadorian coffee.

Did You Know?

Tigrillo gets its name from the ocelot (tigrillo) because the mix of yellow egg, white cheese, and green plantain resembles the spotted cat's coat.
