Dutch Open-Faced Egg Sandwich

Thick slices of bread topped with turkey-free cheese and sunny-side-up fried eggs — the Dutch lunch classic that is greater than the sum of its parts.

Ingredients

  • 2 thick slices white bread
  • 2 slices aged Gouda cheese
  • 3 eggs
  • 1 tbsp butter
  • Salt and pepper
  • Optional: tomato slices, lettuce

Instructions

  1. 1 Place bread slices on a plate, top each with a slice of aged Gouda.
  2. 2 Melt butter in a skillet over medium heat.
  3. 3 Fry eggs sunny-side-up until whites are set but yolks are still runny.
  4. 4 Place fried eggs on top of the cheese-covered bread.
  5. 5 Season with salt and pepper. Serve immediately with tomato and lettuce if desired.
