Mashed Carrots, Onions and Potatoes

A rustic mash of carrots, onions, and potatoes, slow-cooked until sweet and golden — the dish that celebrates Dutch independence.

Ingredients

  • 1kg potatoes, peeled and cubed
  • 500g carrots, sliced
  • 3 large onions, chopped
  • 50g butter
  • 100ml warm milk
  • Salt and white pepper
  • Smoked beef sausage for serving

Instructions

  1. 1 Boil potatoes and carrots together in salted water for 20 min until very tender.
  2. 2 Meanwhile, sauté onions in half the butter until deeply golden and sweet, about 15 min.
  3. 3 Drain potatoes and carrots. Mash with remaining butter and warm milk.
  4. 4 Fold in the caramelized onions. Season with salt and white pepper.
  5. 5 Serve in a mound with sliced smoked beef sausage alongside.
