Instructions

    Boil potatoes and carrots together in salted water for 20 min until very tender.

    Meanwhile, sauté onions in half the butter until deeply golden and sweet, about 15 min.

    Drain potatoes and carrots. Mash with remaining butter and warm milk.

    Fold in the caramelized onions. Season with salt and white pepper.
