Cut passion fruits in half and scoop pulp and seeds into a blender. You should have about one and a half cups of pulp.

Add cold water and sugar to the blender. Pulse briefly, just enough to separate seeds from pulp without crushing them.

Strain through a fine mesh strainer, pressing pulp with a spoon to extract maximum juice. Discard seeds.

Taste and adjust sweetness. Chinola is naturally tart, so add more sugar if desired.

Add crushed ice to the pitcher and stir. Pour into tall glasses.

Serve immediately while cold and fresh. The vibrant orange color should be clear and bright.
