A platter of spongy canjero flatbread topped with sauteed spiced meat cubes, creating the perfect marriage of tangy bread and savory, aromatic beef. This is Djibouti's ultimate combination plate.

Ingredients

  • 4 prepared laxoox pancakes
  • 500g beef, diced small
  • 1 onion, diced
  • 1 green pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1 green chili, sliced
  • 3 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro
  • Lime wedges

Instructions

  1. 1 Prepare the suqaar: heat oil in a frying pan over high heat. Sear diced beef for four minutes until browned on all sides.
  2. 2 Add onion, garlic, green pepper, and green chili. Reduce heat to medium and cook for five minutes until vegetables soften.
  3. 3 Season with cumin, turmeric, salt, and pepper. Stir-fry for three more minutes until everything is well combined and fragrant.
  4. 4 Lay the laxoox flat on serving plates. Spoon the hot suqaar onto the center of each flatbread.
  5. 5 Garnish with fresh cilantro and lime wedges. Eat by tearing pieces of laxoox and wrapping them around the meat.
