A crispy French baguette filled with spiced tuna, hard-boiled eggs, harissa, and fresh vegetables. This popular street food reflects the French colonial influence fused with local Djiboutian flavors.
Ingredients
2 French baguettes, split lengthwise
200g canned tuna, drained
2 hard-boiled eggs, sliced
2 tbsp harissa paste
1 tomato, sliced
1/2 cucumber, sliced
1 small onion, thinly sliced
2 tbsp olive oil
Salt and pepper to taste
Lettuce leaves
Juice of 1 lemon
Instructions
1Split the baguettes lengthwise without cutting all the way through. Open them like a book and remove some of the soft interior bread to create a hollow.
2Mix the drained tuna with harissa paste, olive oil, lemon juice, salt, and pepper in a bowl until evenly combined and spicy.
3Spread the spiced tuna mixture generously along the bottom half of each baguette.
4Layer sliced hard-boiled eggs, tomato slices, cucumber, onion rings, and lettuce leaves on top of the tuna mixture.
5Close the baguettes, press down gently, and slice each in half on the diagonal. Serve immediately while the bread is still crispy.
