Ingredients

  • 150g cold-smoked salmon, sliced
  • 6 eggs
  • 3 tbsp heavy cream
  • 2 tbsp butter
  • 2 slices sourdough bread, toasted
  • Fresh chives, chopped
  • Fresh dill
  • Salt and white pepper
  • Lemon wedge

Instructions

  1. 1 Whisk eggs with cream, salt, and white pepper.
  2. 2 Melt butter in a non-stick pan over low heat.
  3. 3 Pour in egg mixture, stir slowly with a spatula, forming soft, large curds.
  4. 4 Remove from heat while eggs are still slightly wet — they will continue cooking.
  5. 5 Place toast on plates, spoon scrambled eggs on top.
  6. 6 Drape smoked salmon over the eggs. Garnish with chives, dill, and a lemon wedge.
