Fluffy, spherical pancakes cooked in a special cast iron pan, dusted with powdered sugar and served with raspberry jam.

Ingredients

  • 250g flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp sugar
  • 1/4 tsp cardamom
  • 3 eggs, separated
  • 350ml buttermilk
  • 50g melted butter
  • Butter for the pan
  • Powdered sugar and raspberry jam for serving

Instructions

  1. 1 Mix flour, baking powder, baking soda, sugar, and cardamom.
  2. 2 Whisk egg yolks with buttermilk and melted butter. Stir into dry ingredients.
  3. 3 Whip egg whites to stiff peaks and fold gently into the batter.
  4. 4 Heat æbleskiver pan over medium heat. Add a small knob of butter to each well.
  5. 5 Fill each well 3/4 full with batter. Cook until edges set, about 2 min.
  6. 6 Use a knitting needle to turn each ball 90 degrees. Continue turning until golden and cooked through, about 5-6 min total.
  7. 7 Dust with powdered sugar, serve with raspberry jam for dipping.
