Tangy pickled beef sausages marinated with onions, peppers, and spices in a vinegar brine — the quintessential Czech beer snack.

Ingredients

  • 6 beef sausages (spekacky-style)
  • 2 large onions, sliced into rings
  • 2 hot peppers, sliced
  • 200ml white vinegar
  • 100ml water
  • 2 tbsp sugar
  • 1 tbsp mustard seeds
  • 5 allspice berries
  • 3 bay leaves
  • 1 tsp black peppercorns
  • Salt

Instructions

  1. 1 Score sausages diagonally on both sides.
  2. 2 Layer sausages with onion rings and pepper slices in a glass jar.
  3. 3 Boil vinegar, water, sugar, mustard seeds, allspice, bay leaves, peppercorns, and salt.
  4. 4 Pour hot brine over sausages. Ensure fully submerged.
  5. 5 Seal and refrigerate at least 3 days, ideally a week.
  6. 6 Serve cold with bread and mustard.
