300g beef tenderloin, hand-chopped

1 raw egg yolk

1 small onion, finely diced

2 tbsp Dijon mustard

1 tbsp Worcestershire sauce

Hot paprika

Salt, pepper

8 slices fried bread (topinka)

Instructions

Hand-chop beef tenderloin into very fine pieces (never grind).

Mound chopped beef on a plate with egg yolk on top.

Arrange small piles of onion, mustard, paprika, and other condiments around the plate.

Toast bread slices, rub with garlic.

Each diner mixes their own tartare to taste at the table.

Spread on garlic toast and eat immediately.
