A thick slab of Edam cheese coated in breadcrumbs and fried to a golden, molten-centered perfection — Czech street food royalty.

Ingredients

  • 2 thick slices Edam cheese (2cm)
  • 2 eggs, beaten
  • 100g all-purpose flour
  • 150g fine breadcrumbs
  • Oil for frying
  • Salt

Instructions

  1. 1 Cut cheese into 2cm-thick slices.
  2. 2 Coat each slice: flour, then egg, then breadcrumbs. Double-coat for extra crunch.
  3. 3 Heat oil to 170C. Fry cheese 2-3 min per side until golden.
  4. 4 Drain on paper towels briefly.
  5. 5 Serve immediately with tartar sauce and a lemon wedge on a bed of fries.
