Ingredients

  • 600g beef round
  • 200ml heavy cream
  • 4 tbsp fresh dill, chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • 500ml beef broth
  • Salt, white pepper

Instructions

  1. 1 Simmer beef in broth with salt until tender, about 1.5 hours.
  2. 2 Make a roux with butter and flour, cook 2 min.
  3. 3 Gradually whisk in broth from the beef.
  4. 4 Add cream, vinegar, sugar, and generous dill. Simmer 10 min.
  5. 5 Season to taste — sauce should be tangy and creamy.
  6. 6 Slice beef, serve smothered in dill sauce with bread dumplings.
