A hearty, creamy potato soup enriched with root vegetables, mushrooms, and a swirl of sour cream.

Ingredients

  • 6 medium potatoes, diced
  • 2 carrots, diced
  • 1 celery root, diced
  • 1 onion, diced
  • 200g mushrooms, sliced
  • 1.5L vegetable broth
  • 200ml sour cream
  • 2 tbsp butter
  • Fresh parsley
  • Salt, pepper, marjoram

Instructions

  1. 1 Melt butter, saute onion until soft.
  2. 2 Add potatoes, carrots, celery root, and broth. Simmer 20 min.
  3. 3 Add mushrooms, cook 5 min more.
  4. 4 Mash some potatoes against the pot to thicken.
  5. 5 Stir in sour cream and marjoram. Season.
  6. 6 Garnish with parsley and serve.
