Cypriot Cheese-Filled Crepes

Paper-thin pastry sheets folded around halloumi and fresh mint, pan-fried in olive oil until crispy and golden, with the cheese molten inside.

Ingredients

  • 2 cups flour
  • 3/4 cup warm water
  • Pinch of salt
  • 250g halloumi, grated
  • 2 tbsp fresh mint, chopped
  • Olive oil for frying
  • Honey for drizzling (optional)

Instructions

  1. 1 Make dough with flour, water, and salt. Knead until smooth, rest 15 minutes.
  2. 2 Divide into 6 balls. Roll each paper-thin on a floured surface.
  3. 3 Spread grated halloumi and mint across each circle.
  4. 4 Fold in half, then in half again to make a triangle.
  5. 5 Pan-fry in olive oil on medium heat for 2-3 minutes per side until golden and crispy.
  6. 6 Serve hot, drizzled with honey if desired.
