A nourishing golden chicken soup loaded with root vegetables, corn, and fideos, seasoned with sour orange and cumin — Cuba's cure for everything.

Ingredients

  • 1kg chicken pieces (bone-in, skin removed)
  • 2 potatoes, cubed
  • 1 large carrot, sliced
  • 1 chayote, cubed
  • 2 ears corn, halved
  • 1 cup fideos (thin pasta)
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tsp cumin
  • Juice of 1 sour orange
  • Cilantro, salt, pepper

Instructions

  1. 1 Place chicken, onion, garlic, and cumin in a large pot. Cover with water, bring to a boil. Skim foam. Simmer 30 min.
  2. 2 Remove chicken, shred meat, discard bones. Return meat to broth.
  3. 3 Add potatoes, carrot, chayote, and corn. Simmer 20 min until vegetables are tender.
  4. 4 Add fideos and cook 5-7 min until pasta is done.
  5. 5 Stir in sour orange juice, salt, and pepper.
  6. 6 Serve in deep bowls garnished with cilantro.
