Instructions

    Boil the green plantain chunks in salted water for 20 to 25 minutes until they are completely tender and can be easily pierced with a fork.

    While the plantains cook, heat the olive oil in a small skillet and sauté the minced garlic over low heat for 2 to 3 minutes until golden and fragrant, being careful not to burn it.

    Drain the cooked plantains and place them in a large bowl, then mash them vigorously with a fork or potato masher until smooth but still slightly chunky.

    Pour the garlic oil, chicken broth, lime juice, salt, and pepper over the mashed plantains and stir everything together until well combined and creamy.
