The Story Behind Obleas

Obleas descend from Catholic communion wafers brought by Spanish missionaries. Colombians secularized them by spreading arequipe between the thin discs, creating an iconic street snack. The oblea cart, stationed in every park and plaza, became a symbol of Colombian urban life. The combination with cheese is controversial but beloved in Boyacá.
