A refreshing, tangy drink made from crushed lulo fruit, lime, and sugar, served ice-cold with chunks of fruit — Cali's signature refreshment.

Ingredients

  • 8 ripe lulo fruits (or substitute tomatillos + lime)
  • 1 cup sugar
  • 4 cups cold water
  • Juice of 2 limes
  • Crushed ice
  • Fresh mint (optional)

Instructions

  1. 1 Cut lulo fruits in half, scoop out pulp with seeds.
  2. 2 Mash half the pulp roughly with a fork — do not blend smooth, chunks are essential.
  3. 3 Blend the other half with water and sugar until smooth. Strain if desired.
  4. 4 Combine blended mixture with mashed pulp and lime juice.
  5. 5 Serve in tall glasses over crushed ice. Garnish with mint if desired.
