Ingredients

  • 800g beef ribs, cut into pieces
  • 6 cups water
  • 4 medium potatoes, peeled and halved
  • 2 scallions, chopped
  • 3 cloves garlic, crushed
  • 1 bunch cilantro
  • Salt and pepper
  • Lime wedges for serving

Instructions

  1. 1 Bring water to a boil. Add beef ribs, garlic, and scallions. Simmer 30 min, skimming any foam.
  2. 2 Add potatoes. Continue simmering 20-25 min until potatoes are very tender and beginning to break apart.
  3. 3 Season generously with salt and pepper.
  4. 4 Divide ribs and potatoes among bowls. Ladle hot broth over.
  5. 5 Garnish with chopped cilantro and serve with lime wedges.
