油条 (You Tiao)

Golden deep-fried dough sticks that are light, airy, and slightly chewy. Eaten for breakfast dipped in soy milk or congee, or stuffed inside a rice roll.

Ingredients

  • 300g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 180ml warm water
  • 1 tablespoon vegetable oil
  • Oil for deep frying

Instructions

  1. 1 Mix flour, baking powder, baking soda, salt, water, and oil into a soft dough.
  2. 2 Knead briefly, cover, and rest for at least two hours or overnight.
  3. 3 Roll dough flat, cut into strips, stack pairs and press together.
  4. 4 Stretch each pair gently and drop into hot oil at 200C.
  5. 5 Fry turning frequently until golden and puffed, drain on paper.

Youtiao were allegedly created as an expression of anger against the traitorous Song Dynasty official Qin Hui, with the two joined strips representing him and his wife.
