Cumin-dusted grilled lamb skewers, the iconic street food of Xinjiang and now found on every night market street in China. The smoky charcoal flavor and cumin-chili seasoning are irresistible.

Ingredients

  • 500g lamb leg cubed with some fat
  • 2 tablespoons ground cumin
  • 2 tablespoons chili flakes
  • 1 teaspoon salt
  • Metal or bamboo skewers
  • Vegetable oil

Instructions

  1. 1 Cut lamb into bite-sized cubes, keeping some fat on each piece.
  2. 2 Thread five or six pieces onto each skewer alternating lean and fat.
  3. 3 Grill over very hot charcoal, turning frequently.
  4. 4 When almost done, sprinkle generously with cumin, chili flakes, and salt.
  5. 5 Serve immediately off the grill while sizzling.
