Often called the Chinese hamburger, this Xi An classic stuffs slow-braised spiced pork or beef into a crispy flatbread bun. The meat is chopped and seasoned with its own braising juices.

Ingredients

  • 500g pork belly or beef
  • 2 tablespoons dark soy sauce
  • 1 tablespoon light soy sauce
  • Star anise, bay leaf, cinnamon, cloves
  • Dried chilies
  • Rock sugar
  • Flatbread dough: flour, water, oil
  • Cilantro and pickled green peppers

Instructions

  1. 1 Braise the meat with soy sauces, spices, and rock sugar for two to three hours until fork tender.
  2. 2 Make the mo bread by layering dough with oil, coiling, and pan-baking until flaky.
  3. 3 Chop the braised meat finely, mixing in some braising liquid.
  4. 4 Split the mo bread open and stuff generously with the chopped meat.
  5. 5 Top with cilantro and pickled peppers if desired.
