白粥 (Bai Zhou)

A silky rice porridge slow-cooked until the grains completely break down into a smooth, creamy base. Served plain with an array of toppings or as a soothing comfort food.

Ingredients

  • 200g jasmine rice
  • 2 liters water or stock
  • 1 teaspoon salt
  • Sliced ginger
  • Century egg and pork floss for topping
  • Fried dough sticks for dipping
  • Soy sauce and white pepper

Instructions

  1. 1 Rinse the rice and optionally soak for thirty minutes.
  2. 2 Bring water to a boil, add rice and ginger, then reduce to a low simmer.
  3. 3 Cook for sixty to ninety minutes, stirring occasionally, until grains dissolve.
  4. 4 Season with salt and white pepper.
  5. 5 Serve with your choice of toppings such as century egg, pork floss, or scallions.
