Eight Treasures Rice

A festive glutinous rice pudding studded with eight types of dried fruits, nuts, and red bean paste, steamed in a bowl and inverted for a dome presentation.

Ingredients

  • 400g glutinous rice soaked
  • 200g sweet red bean paste
  • Dried jujubes
  • Lotus seeds
  • Dried longan
  • Goji berries
  • Walnuts
  • Candied winter melon
  • Raisins
  • 3 tablespoons lard or butter
  • 3 tablespoons sugar

Instructions

  1. 1 Steam soaked glutinous rice for twenty minutes until cooked.
  2. 2 Mix hot rice with lard and sugar.
  3. 3 Arrange dried fruits and nuts in a decorative pattern at the bottom of a greased bowl.
  4. 4 Press half the rice into the bowl, add a layer of red bean paste.
  5. 5 Top with remaining rice, steam for thirty minutes, then invert onto a plate.
