毛主席红烧肉 (Mao Zhuxi Hong Shao Rou)

The Hunan version of red-braised pork, distinguished by the generous use of fresh chilies and a sweeter, more caramelized sauce. Said to be Mao Zedong personal recipe from Shaoshan.

Ingredients

  • 800g pork belly cubed
  • 4 tablespoons rock sugar
  • 2 tablespoons dark soy sauce
  • 2 tablespoons light soy sauce
  • 3 tablespoons Shaoxing wine
  • 4 fresh red chilies
  • 3 slices ginger
  • Star anise and cinnamon
  • 2 dried bay leaves

Instructions

  1. 1 Blanch pork belly in boiling water for three minutes, drain.
  2. 2 Caramelize rock sugar in a dry wok until deep amber.
  3. 3 Add pork and toss to coat in caramel.
  4. 4 Add soy sauces, wine, chilies, ginger, and spices with enough water to cover.
  5. 5 Simmer on low for ninety minutes then reduce sauce until thick and glossy.

Did You Know?

This dish is served in a restaurant in Shaoshan, Mao birthplace, where they claim to use his original family recipe.
