A Fujian hand-pulled flat noodle soup with minced pork, anchovies, leafy greens, and a poached egg in a savory anchovy-pork broth. Rustic and deeply satisfying.

Ingredients

  • 300g all-purpose flour
  • 1 egg
  • Water for dough
  • 200g minced pork
  • 50g dried anchovies
  • 2 cups sweet potato leaves or spinach
  • 4 eggs for poaching
  • Fried shallots
  • Soy sauce

Instructions

  1. 1 Make dough with flour, egg, and water, rest thirty minutes.
  2. 2 Simmer dried anchovies to make a savory broth base.
  3. 3 Tear dough into flat irregular noodle pieces by hand.
  4. 4 Cook noodles in the anchovy broth with minced pork.
  5. 5 Add greens and poach an egg on top of each bowl, garnish with fried shallots.

Ban Mian is one of the few noodle dishes where the noodles are torn by hand rather than cut or pulled, giving each piece a unique shape.
