4 ripe tomatoes, finely diced

1 large onion, finely diced

1 cup fresh cilantro, finely chopped

2 ají verde or serrano chilies, minced

3 tbsp olive oil

2 tbsp red wine vinegar

Rinse diced onion under cold water to remove sharpness. Drain well.

Combine tomatoes, onion, cilantro, and minced ají in a bowl.
