Mote con Huesillo

Wheat Berry and Dried Peach Drink

A sweet, refreshing drink of husked wheat berries and sun-dried peaches in a cinnamon-spiced syrup, served cold from glass carts on Chilean streets.

Ingredients

  • 1 cup mote (husked wheat berries), soaked overnight
  • 200g huesillos (dried peaches)
  • 1 cup sugar
  • 2L water
  • 2 cinnamon sticks
  • 1 strip orange peel

Instructions

  1. 1 Soak mote overnight. Boil in fresh water for 40-50 min until tender but chewy. Drain and cool.
  2. 2 In a separate pot, dissolve sugar in water with cinnamon sticks and orange peel. Bring to a boil.
  3. 3 Add dried peaches to the syrup. Simmer 20 min until peaches are plump and tender.
  4. 4 Remove from heat and let cool completely. Refrigerate until very cold.
  5. 5 To serve, place a spoonful of cooked mote in a tall glass, add a peach, and fill with cold syrup.
  6. 6 Serve with a long spoon for eating the mote and peach.
