The simplest and most ubiquitous Chilean side dish: sliced ripe tomatoes and white onion rings dressed with olive oil, salt, and fresh cilantro.

Ingredients

  • 4 large ripe tomatoes, sliced
  • 1 white onion, sliced into thin rings
  • 3 tbsp olive oil
  • Fresh cilantro, chopped
  • Salt to taste

Instructions

  1. 1 Soak onion rings in cold water for 10 min to remove sharpness. Drain well.
  2. 2 Arrange tomato slices on a platter or in a shallow bowl.
  3. 3 Scatter onion rings over tomatoes.
  4. 4 Drizzle generously with olive oil and season with salt.
  5. 5 Top with fresh chopped cilantro.
  6. 6 Serve immediately at room temperature.
