Ingredients

  • 200g millet flour
  • 1 liter water
  • 100g sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Juice of half a lemon

Instructions

  1. 1 Mix millet flour with two cups of cold water in a bowl, stirring until completely smooth with no lumps remaining.
  2. 2 Bring remaining water to a boil in a medium pot. Add a pinch of salt to the boiling water.
  3. 3 Slowly pour the millet slurry into the boiling water while stirring constantly with a whisk to prevent any lumps from forming.
  4. 4 Reduce heat to low and cook for fifteen minutes, stirring frequently, until the porridge thickens to a smooth, flowing consistency.
  5. 5 Add sugar, vanilla extract, and lemon juice. Stir well and cook for two more minutes until flavors meld together.
