Ingredients

  • 150g fine millet flour
  • 500ml water
  • 300ml plain yogurt
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • Pinch of salt
  • Pinch of nutmeg
  • Toasted sesame seeds for garnish

Instructions

  1. 1 Mix millet flour with one cup of cold water in a bowl, whisking until completely smooth and lump-free.
  2. 2 Bring remaining water to a boil in a pot. Slowly pour in the millet slurry, stirring constantly with a whisk.
  3. 3 Cook on low heat for fifteen minutes, stirring continuously, until the mixture is thick, smooth, and creamy like custard.
  4. 4 Add vanilla extract, a pinch of salt, and nutmeg. Stir well and remove from heat. Let cool for ten minutes.
  5. 5 Divide the millet cream among serving bowls. Top each with a generous spoonful of cool, tangy yogurt.
  6. 6 Drizzle with honey and sprinkle with toasted sesame seeds. Serve warm or at room temperature.
