Ingredients

  • 1 large aubergine, diced
  • 200g okra, sliced
  • 2 large tomatoes, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp palm oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh basil leaves

Instructions

  1. 1 Prepare all vegetables: dice the aubergine, slice the okra, chop the tomatoes, and slice the onion.
  2. 2 Heat palm oil in a large skillet over high heat until shimmering.
  3. 3 Add onion and garlic, stir-fry for two minutes until fragrant.
  4. 4 Add aubergine and cook for five minutes, stirring frequently, until it begins to soften and brown.
