Jus de Gingembre

Ginger Juice Drink

Intensely spicy and refreshing fresh ginger drink sweetened with sugar and sharpened with lime, the most popular non-alcoholic beverage in the Central African Republic.

Ingredients

  • 300g fresh ginger root, peeled
  • 1.5 litres water
  • 150g sugar
  • 3 limes, juiced
  • 1/2 tsp vanilla extract (optional)
  • Mint leaves for garnish
  • Ice cubes for serving

Instructions

  1. 1 Peel the ginger root and grate finely or blend with a small amount of water until pulpy.
  2. 2 Combine the ginger pulp with one litre of water and let it steep for at least thirty minutes for maximum flavour extraction.
  3. 3 Strain through a fine sieve or cheesecloth, pressing firmly to extract all the liquid. Discard the fibre.
  4. 4 Add sugar to the strained liquid and stir until completely dissolved. Add remaining water to reach desired concentration.
  5. 5 Stir in lime juice and vanilla extract if using. Taste and adjust sweetness and tartness.
  6. 6 Serve over ice cubes in tall glasses, garnished with a sprig of mint and a lime wheel.
