Peel the ginger root and grate finely or blend with a small amount of water until pulpy.

Combine the ginger pulp with one litre of water and let it steep for at least thirty minutes for maximum flavour extraction.

Strain through a fine sieve or cheesecloth, pressing firmly to extract all the liquid. Discard the fibre.

Add sugar to the strained liquid and stir until completely dissolved. Add remaining water to reach desired concentration.

Stir in lime juice and vanilla extract if using. Taste and adjust sweetness and tartness.

Serve over ice cubes in tall glasses, garnished with a sprig of mint and a lime wheel.
