Sweet ripe banana fritters with a crispy golden shell and soft, fragrant interior, dusted with sugar — a beloved Central African dessert and snack.

Ingredients

  • 4 very ripe bananas, mashed
  • 150g all-purpose flour
  • 2 tbsp sugar
  • 1 egg
  • 1/4 tsp nutmeg
  • Pinch of salt
  • Vegetable oil for deep frying
  • Powdered sugar for dusting

Instructions

  1. 1 Mash the ripe bananas in a bowl until smooth with only a few small lumps remaining.
  2. 2 Add flour, sugar, egg, nutmeg, and salt. Mix until a thick, cohesive batter forms.
  3. 3 Heat vegetable oil in a deep pan to 170 degrees Celsius.
  4. 4 Drop tablespoons of batter into the hot oil, working in batches to avoid crowding the pan.
  5. 5 Fry for three to four minutes, turning once, until deep golden brown on all sides.
  6. 6 Remove with a slotted spoon, drain on paper towels, dust with powdered sugar, and serve warm.
