A savory Cape Verdean tuna roll wrapped in a light pastry, seasoned with onions, peppers, and olives — perfect party food.

Ingredients

  • 400g canned tuna, drained
  • 1 sheet puff pastry
  • 1 onion, finely diced
  • 1 red bell pepper, finely diced
  • 50g black olives, chopped
  • 2 hard-boiled eggs, chopped
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 egg yolk for glazing
  • Salt and black pepper
  • 1 tsp paprika

Instructions

  1. 1 Sauté onion and bell pepper in olive oil until soft, about 5 min.
  2. 2 Mix tuna, sautéed vegetables, olives, chopped eggs, tomato paste, and paprika. Season well.
  3. 3 Roll out puff pastry into a rectangle. Spread tuna filling evenly, leaving a border.
  4. 4 Roll up tightly like a jelly roll. Seal edges with a fork.
  5. 5 Brush with beaten egg yolk. Score the top lightly with a knife.
  6. 6 Bake at 200°C (400°F) for 25-30 min until golden and puffed. Slice and serve warm.
