Cape Verdean steamed spiny lobster cooked simply with garlic, butter, and local herbs, letting the sweet Atlantic lobster shine.

Ingredients

  • 2 whole spiny lobsters (about 500g each)
  • 60g butter
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp paprika
  • Fresh parsley, chopped
  • Salt
  • Water for steaming

Instructions

  1. 1 Bring water to a rolling boil in a large pot fitted with a steamer basket.
  2. 2 Place lobsters in the steamer, cover, and steam 12-15 min until shells turn bright red.
  3. 3 Meanwhile, melt butter in a small saucepan. Add garlic and cook 1 min until fragrant.
  4. 4 Stir lemon juice and paprika into the garlic butter. Season with salt.
  5. 5 Remove lobsters, split in half lengthwise. Drizzle with garlic butter and parsley.
