Smoky, flame-grilled beef skewers coated in a fiery blend of ground spices, onion powder, and chili, sold by roadside vendors across Cameroon.

Ingredients

  • 1kg beef, cut into small cubes
  • 2 tbsp groundnut oil
  • 1 tbsp ground suya spice (yaji)
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1 bouillon cube, crushed
  • Salt to taste
  • Sliced onions and tomatoes for serving

Instructions

  1. 1 Thread beef cubes onto wooden skewers, about 5-6 pieces per skewer.
  2. 2 Mix all spices together with groundnut oil to form a paste.
  3. 3 Coat each skewer generously with the spice paste.
  4. 4 Grill over hot charcoal, turning frequently, for 10-12 minutes until charred and cooked through.
  5. 5 Sprinkle extra suya spice on the finished skewers.
  6. 6 Serve hot with sliced onions, tomatoes, and extra chili powder on the side.
